The paring knife is one of the most versatile and therefore most widely used cutting tools in the kitchen. Its main daily use is for cutting and peeling onions, vegetables and fruit.
Its 8cm blade is made of X50CrMoV15 stainless steel and is both rigid and very sharp. This alloy achieves a Rockwell strength of 56/57 HRC, a specific hardness that offers a perfect compromise between edge longevity and ease of sharpening.
What's more, the weight of the Opinel paring knife is optimally distributed from one end to the other, since it is forged from a solid, round steel bar.
In addition, Opinel is committed to sharpening its knives with exceptionally precise grinding wheels whose diameter is controlled to 1/100mm. This guarantees infallible regularity of the 30°combined angle, for a high quality cut.
Opinel has left nothing to chance when it comes to the handle, which is made from stabilized, grained beech wood, a living material that balances and reacts to its environment, giving these knives a unique elegance. In terms of ergonomics, the Savoyard manufacturer has gone to great lengths to ensure a natural, comfortable grip for its users. In fact, the handle is equipped with V-grip (for easy gripping and blade guidance) and Ergo-profil (curved handle shape to reduce fatigue during effort).
Wash the knife in lukewarm water with a mild soap, taking care not to use an excessively abrasive sponge. Then dry and store in a drawer. Absolutely avoid running the knife under water or allowing water to penetrate the slot, as this will deform the handle.
