The filleting knife is ideal for lifting fish fillets and making precise cuts in tender foods.
The stainless steel blade is long, thin and sharp, giving you excellent maneuverability for prolonged cutting sessions. The X50CrMoV15 alloy, widely used in Western professional cutlery, boasts high cutting power and a certain flexibility that makesregular sharpening easy. The alloy's strength is optimized by the hot-forging process, which enables the blade to reach 56/57 HRC Rockwell with a very even distribution of steel components.
What's more, the steel's even weight distribution ensures perfect balance in the hand. This is the major advantage of knives forged from a single piece of steel: blade, Bolster and handle undergo the forging process simultaneously, guaranteeing long life.
The beechwood handle with its visible grain is absolutely majestic. Each piece is unique in appearance, since the wood can vary significantly from one tree to another. The handle's ergonomics are enhanced tenfold byOpinel 's two systems: V-grip (easy gripping) and ergo-profile (curved shape to prevent twisting during long-term use).
To wash wooden handles, Opinel recommends using a clean cloth dampened with lukewarm water (20°C), then wiping with a dry cloth. It is important not to allow water to penetrate the slot, as this may cause deformation of the handle.
