These Opinel Les forgés 1890 knives are, as the name of the collection indicates, 100% forged. Also known as "full forge" in cutlery circles, this means that the knife is formed from a single piece from end to end, thus avoiding the welding points that weaken the knife. The knife also has a "full tang" blade that extends to the end of the handle. You can easily see this because the tang follows the contours of the handle, so it's visible between the handle's two plates. This structure is a real guarantee of robustness, but also of balance in the hand, since the steel is optimally distributed, so handling is enhanced and fatigue reduced.
What's more, these knives are made from X50CrMoV15 steel , a composition that offers numerous advantages. Firstly, this hardened steel alloy is forged at 1200°, then cooled and hardened to 56/57 HRC on the Rockwell scale, giving you the perfect compromise between good cutting quality and ease of sharpening. Then, the ingenious blend of Chromium, Molybdenum and Vanadium gives these knives brilliance and resistance to corrosion, wear and acidity.
Sharpening is the final stage in the manufacturing process of Opinel Forged 1890 knives. It is carried out by hand, passing the blade through grindstones whose diameter is controlled to 1/100 mm to guarantee the regularity of the cutting angle, which is a combined 30°. This angle offers an excellent ratio, as the blade edge is sharp enough to cut perfectly and durably without being too fragile.

The handle of the Opinel 1890 knife offers optimum comfort of use thanks to its ergonomic profile. It has been designed for efficient, fatigue-free cutting. Two key features contribute to this excellent grip. The V-grip system allows you to guide the blade more easily and make incredibly precise cuts. The ergo-profile gives the handle a curved volume, ensuring a tension-free grip and helping to reduce fatigue during repetitive movements.
Its remarkable aesthetic is reminiscent of Opinel' s famous original pocket knives. The handle is made of stabilized, unvarnished beechwood. This noble wood comes exclusively from sustainably managed Jura forests, as Opinel is very sensitive to environmental protection.
