The Opinel Les Forges 1890 carving knife is mainly used for precision carving of roasts and poultry, but can also be useful for slicing large fruits and vegetables.
The 16cm blade is forged at very high temperatures from a bar of X50CrMoV15 stainless steel , a carbon-enriched alloy renowned for its excellent cutting power and ease of sharpening. The fact that this knife is made from a single piece from end to end ensures perfect balance in the hand during daily use. What's more, the hot-forging process improves the molecular structure of the steel (fibering), enabling the blade to acquire a hardness of 56/57 HRC.
The Opinel sharpening angle is set by hand using precision grinding wheels at the Savoyard manufacturer's factory in Chambéry. This angle is 30° combined, which contributes to its excellent sharpness.
The stabilized (water-resistant) beechwood handle pays homage to the traditional pocket knife invented by Joseph Opinel. Ergonomics are enhanced by the curved ergo-profile, ensuring a comfortable, fatigue-reducing grip. The V-grip shape has been designed for better blade guidance and hand repositioning.
To clean the handle, use a damp sponge, then dry immediately with a cloth. Avoid running it under water and letting water enter the slot, as this could damage the handle.
