The chef knife is unquestionably the most versatile cutting tool in a knife range. In fact, if you had to keep just one, it would probably be this one, as it is so multi-purpose. It can be used to cut meat and fish (boneless), as well as to slice fruit and vegetables or chop herbs.
This Opinel Les Forges chef's knife has a 20cm blade, the most common size used by professional chefs, who find it very handy. The blade is forged at very high temperatures, giving it a high strength rating of 56/57 Rockwell HRC and optimal steel fiberization. The X50CrMoV15 steel used here is interesting for its good anti-corrosion properties, its flexibility to withstand regular sharpening and its excellent cutting power. The 30° sharpening angle (15° on each side) is performed manually and scrupulously controlled to ensure the best possible cutting performance.
What's more, this knife is 100% forged from a single piece of steel, so it's perfectly balanced in the hand and lasts longer.
The handle is highly refined, inspired by the classic pocket knives that have made the brand so successful. It is made from stabilized beech wood (more resistant to water), with visible dark-toned veins that add even more cachet to the design. Each piece is unique, since wood is a living material. When it comes to comfort, Opinel has spared no expense, as this handle incorporates two ingenious features. The V-grip promotes a pincer grip that gives a certain grip when cutting, and the ergo-profile offers a curved shape to the handle to reduce twitching during prolonged gripping.
To clean wooden handles, we recommend using a clean cloth dampened with lukewarm water, then wiping with a dry cloth. Absolutely avoid running the handle under water or allowing water to penetrate the slot, as this will deform the handle.
