This Opinel knife, 100% forged, is specially designed for boning poultry and meats, as it allows you to easily remove tendons and fat, and gently loosen meat from bones.
Its 13cm blade in X50CrMoV15 steel makes it resistant to corrosion and the acidity of food. This alloy offers the right compromise between high-performance cutting quality and ease of sharpening. What's more, the hot forging process (1200°) gives the blade a hardness of 56/57 Rockwell HRC, for long-lasting sharpness. The Opinel sharpening angle is set by hand using precision grinding wheels at the Savoyard manufacturer's factory in Chambéry. This angle is a combined 30°, which contributes to its excellent sharpness.
In addition, this Opinel knife is very robust and well-balanced, thanks to the fact that it is forged in one piece from end to end at an extremely high temperature.
The beautiful stabilized beechwood handle is a fine tribute to the famous pocket knife that built the reputation of this family-owned company. Its ergonomic profile combines the V-grip and ergo-profile systems to give you both excellent blade guidance and a comfortable grip. These attributes also help reduce muscle fatigue during prolonged meat-cutting sessions.
As for maintenance, the golden rule is of course not to put it in the dishwasher, but to clean it with a damp sponge and then dry it immediately afterwards, so that the handle doesn't get waterlogged in the slot.
