Sabatier Éléphant's Ideal Forged knives are manufactured by Thiers Issard, a French cutlery company based in Thiers. Its workshops produce top-quality kitchen knives.
The santoku features a 17cm blade in 4116 stainless steel. This steel contains vanadium, chromium and molybdenum, enabling the blade to resist corrosion, shock, wear and deformation. With a hardness of 55HRC, 4116 stainless steel is easy to maintain. The blade is with granton edgeto prevent food from sticking to it.
The knife's full tang blade is forged and ground by hand. The blade is hot-forged, then soaked in 2 oil baths (quenching and tempering) to fix the steel molecules together for added strength. Leather rollers are used to grind the blade, sharpening it and giving it its cutting edge.
The knife has a robust, easy-to-clean black nylon handle. This synthetic material is widely used in culinary circles thanks to its excellent properties. The handle is set against the knife blade with 3 aluminum rivets for added strength.
A round aluminum bolster ensures the knife's balance and lightness. What's more, the ergonomic shape of the handle makes the knife comfortable to use.
We strongly recommend washing your santoku by hand and drying it immediately before storage. This will preserve your knife.
