A carefully crafted kitchen knife blade
This 18cmsantoku knife features a with granton edgeblade with a core of 10Cr15CoMoV stainless steel . The carbon content of this steel is around 1.05%, giving it a very interesting composition and a long-lasting, sharp cutting edge. The alloy also has a chromium content of around 15%, giving it excellent corrosion resistance.
The core is then surrounded by 67 layers of damascus. Damascus is a unique process in which different layers of steel (hard and soft) are superimposed around the blade core. The hard steel reinforces the knife's solidity, while the soft steel gives it a slight suppleness (making it less brittle). Beyond its technical advantages, damascus creates unique waves on each knife, which are extremely fine and undulate over the cutting surface, for a breathtaking visual effect.
The upper part of the blade has been press-hammered, creating unique patterns on each blade. In addition to its aesthetic appeal, hammering is recommended to enhance the knife's non-stick properties (in the manner of honeycombing).
The left-hand side of the blade has been laser-engraved with the brand name and range, for even greater authenticity. The cutting edge has been worked into a V-shape for excellent food penetration (this shape, combined with quality sharpening, cuts rather than breaks the internal fibers of food). The final sharpening is done by hand, on a strip of leather at a cumulative angle of 30°. The result is formidable: you'll feel it from the very first use!
Last but not least, the blade has a mirror-polished finish, which adds to its cachet, while making it more resistant to corrosion (since polishing flattens the surface of the steel and makes it less porous).
The handle is a very important element in the composition of the Wusaki Damascus 10Cr knife, and is made from olive wood, which has been sanded and treated to give you a pleasantly soft feel. This precious wood, with its characteristic scent, contrasts perfectly with the cold appearance of the steel. Its veins are unique on each knife: prestige guaranteed! It has been cut into an original shape, like a sickle, to be very comfortable in the hand and to sit naturally in the palm. In this way, the thumb and forefinger maintain a firm grip during use, for firm control of the knife. Finally, Wusaki handles are a little longer than the current cutlery market average, for easy handling by larger hands!
Each handle is unique! Colors, patterns and grain can vary according to the parts of the wood used to make the handles. For example, some parts are darker than others, depending on the knots in the wood. This is perfectly normal.
The base engraved with the Japanese character"Tiger" gives the knife a perfect finish. Its sandblasted appearance contrasts with the smooth surface of the steel. The three red edgings add an undeniable touch of elegance to the knife.
Storage and care of your santoku knife
The Wusaki Damascus 10Cr knife is a creative gem: the combination of materials and colors makes it an exceptional piece of cutting equipment. At once simple and slightly sophisticated, it will appeal to even the most fastidious of cooks!
Each Wusaki knife comes in a top-of-the-range box that protects it from shocks. The elegant box makes it an easy gift for any knife enthusiast.
For maintenance, we recommend gentle hand-washing in lukewarm water with a mild soap. You can then wipe the knife with a soft cloth and store it in a dry place. When washing, try to keep the handle as dry as possible, as wood doesn't like to get wet. From time to time, you can also wipe the handle with a soft cloth soaked in olive oil, to add shine and protection.
Please note: on delivery, the knife blade is lightly coated with protective oil. Simply wash before 1st use to remove.
The Damascus 10Cr olive wood range is incompatible with magnet bars due to the depth of hammering and the weight of the knives. Instead, store your knives in a block or Bag!
Wusaki knives are manufactured by a small facility located north of the city of Guangzhou, the capital of Guangdong province in Western China.
