Description

A fine-trimming steel is recommended to restore the smooth cutting edge of your blade. We recommend that you always keep a fine-trimming sharpener in your kitchen, and use it every day before you start cooking. It is also very useful for professionals who use their knives intensively.

The sharpening steel is made of high-carbon steel alloyed with chromium, manganese and silicon.

The steel used is 135 Cr3 file steel (1.35% carbon).

This fine-trimming Sharpening steel perfectly restores the smooth cutting edge and mor-fil of professional blades. It's perfect for use before each use of your knife, for a consistently sharp edge.

The steel is heat-treated to a hardness of 63 to 65 HRC, making it suitable for sharpening all existing steel knives.

Fischer knives feature a hard chromium coating between 8 and 10 microns thick. This coating protects against corrosion and increases surface hardness by 3 to 4 HRC on the edges.

You'll find 3 cuttings at Fischer:

- Standard: this type of cutter is recommended for less intensive use of the knife. It is ideal for dull knives and worn wires. It is not suitable for daily use, as it can lead to loss of material on your knives.

- Fine: these guns perfectly restore the smooth cutting edge and mor-fil of professional blades. You can use it on a daily basis, several times a day before using your knife.

- Extra-fine: FISCHROM series knives sharpen and maintain the edge of razor-sharp knives.

FISCHER blades are magnetized to retain the tiny steel particles that detach from the knife blade during sharpening.

The expertise and quality of FISCHER products have earned them a reputation among many professionals.

A marvel and a must

I'm no stranger to the quality and indestructibility of Fischer shotguns, but this is even better than I expected. A very soft and efficient gun, even on stainless steel knives. I haven't tried it on very hard steels, which isn't the purpose of this type of gun. Perfect for maintaining the edge and restoring sharpness in 3-4 passes. On carbon steel blades, gives a razor-sharp edge. Made in France, with a lifetime warranty, proven sturdiness and outstanding efficiency. What more could you want? Bravo Fischer, the spirit of the brand is still here.

I must surely improve my technique to get a good edge, as it is, it doesn't give a mythical edge on old knives prepared beforehand with coarse grain.

This sharpening gun does what it's made for, and in a remarkable way. After sharpening, the knives cut for real and much better than with the old lambda rifle bought in supermarkets, much cheaper, but of poor quality. You have to know what you want.
