Shimomura TU-9000 knives are made in Japan by the cutlery company of the same name. The company was founded in 1874, specializing in the manufacture of agricultural tools, and in 1957 was among the first to enter the field of stainless steel knives. Thanks to its know-how and high-precision technology, the company creates knives for both private and professional customers.
This 24cm sujihiki knife is your best ally for cutting fine slices. Its long, razor-sharp blade will cut the flesh of any fish cleanly and precisely, without any effort!
The blade is made of stainless steel enriched with molybdenum and vanadium. Molybdenum is a component that enhances strength and corrosion resistance, while vanadium increases the blade's strength and shock resistance. The steel's hardness then reaches 56/58 HRC on the Rockwell scale: the blade retains its edge well and is easy to sharpen!
To guarantee optimum use from the very first cut, the blade has been sharpened with a Sharpening stone by a qualified craftsman.
Then there's the laminated wood handle, whose ergonomic shape ensures comfort of use and a good grip for both right- and left-handed cooks. This material is also lightweight and very easy to maintain. It is black in color, a very elegant match for any kitchen! Finally, there are 2 rivets that hold the handle and blade together, and a stainless steel bolster that adds balance and strength to the knife.
We recommend washing the knife by hand under running water with a neutral soap, then wiping it with a soft cloth before storing it in a dry place. It is preferable not to apply too much pressure to the handle under water, as this could cause the wood to warp. Careful maintenance will keep your knife looking as good as new.
It comes in a golden cardboard box for the perfect gift!
