Shimomura TU-9000 knives are designed in Japan by the company of the same name. Founded in 1874, the company initially specialized in agricultural tools, and didn 't enter the stainless steel knife business until 1957. In fact, it was one of the first! This 21cm chef's knife is a perfectly versatile all-rounder. It is suitable for meat, fish, vegetables, fresh herbs and more. It's an essential piece of kitchen equipment!
Its stainless steel blade is enriched with molybdenum and vanadium. On the one hand, molybdenum promotes strength and resistance to corrosion. On the other hand, vanadium enhances strength and impact resistance. This composition enables the steel to achieve an HRC hardness of 56/58 on the Rockwell scale: the cutting edge is preserved while remaining easy to sharpen!
To guarantee optimum use from the very first cut, the blade has been sharpened by a qualified craftsman on a Sharpening stone.
It also features a laminated wood handle: a lightweight material that's particularly easy to care for. The handle is ergonomically shaped to ensure a good grip and comfortable use. What's more, it's suitable for ambidextrous use! The black handle is complemented by 3 rivets which join the wooden handle to the steel blade. Finally, the stainless steel bolster is the link between blade and handle: it consolidates and balances the knife.
We recommend washing the knife by hand under running water with a neutral soap, then wiping it with a soft cloth before storing it in a dry place. It is preferable not to apply too much pressure to the handle under water, as this could cause the wood to warp. Careful maintenance will keep your knife looking as good as new.
