The craftsmanship and elegance of the Takeshi Saji Japanese paring knife
The Takeshi Saji VG10 Rainbow Nashiji 9cm paring knife is an outstanding example of Japanese knife-making craftsmanship. It is hand-forged by master knifemaker Takeshi Saji in Takefu Knife Village, a traditional blacksmithing center in Fukui prefecture. The village brings together seasoned blacksmiths who share their experience, materials and know-how to perpetuate ancient techniques in a spirit of transmission and innovation.
Since the 1990s, Takeshi Saji has held the honorary title of Master Traditional Craftsman, awarded by the Japanese Ministry of the Economy. His work is recognized the world over for its exceptional finish and visual originality, combining high technical standards with a strong identity.
A Japanese damascus knife designed for precision
This 9cm Japanese Damascus knife is perfect for all tasks requiring precision in the kitchen: peeling, trimming, chiseling or finely carving small fruits and vegetables.
The core of the blade is made of Japanese VG10 steel, a stainless alloy containing around 1% carbon, guaranteeing excellent edge retention. This high concentration of carbon enables a hardness of 60 HRC to be achieved, offering an edge that stays sharp for a long time, yet is easy to maintain.
Around the core, several layers of softer stainless steel alternate, using the Japanese damascus technique. This design ensures the blade's flexibility, while protecting it from bending and twisting. The wavy damascus pattern is then enhanced by a unique copper-effect treatment, unique to the Rainbow series. As a result, each blade presents an original visual: metallic reflections vary from one knife to another.
A nashiji finish is visible on the surface of the blade, providing a subtly rough texture reminiscent of the skin of the nashi pear. This traditional finish limits food adherence, facilitating cutting, particularly on moist or oily foods.
Theflat grind offers an excellent compromise between cutting finesse and blade stability.
An artisan knife with a traditional handle
The handle of this Japanese paring knife is made of rosewood, a dense, noble wood that naturally resists humidity. Its warm shades, from brown to red, harmonize with the reflections of the coppery damascus.
The rosewood is worked to form an octagonal handle, a Japanese cutlery standard that offers a firm grip suitable for all cooks, right- and left-handed. It ensures precise control when cutting.
The bolster is made from red pakkawood, a heat-compressed composite of wood and resin. It guarantees a solid, durable junction between blade and handle, while adding an aesthetic touch to the whole.
Finally, wood pulp fills the interstices between blade and handle, preventing any infiltration of water or food residues. This attention to detail contributes to the knife's durability and hygiene.
This 9cm Japanese damascus knife is a handcrafted piece that deserves meticulous care. It should be washed by hand with a soft sponge and lukewarm water. The dishwasher is forbidden, as is prolonged immersion. After each cut, carefully dry the blade before storing it in a dry place, away from moisture. Storage in its box, a case or on a magnetic bar is ideal for preserving its edge and finish.
