Discover the Wusaki whetstone on KnifeLeader! We recommend it for maintaining your favorite kitchen knives. It's functional and efficient, yet available at a low price! What's more, it comes with two different grit sizes to give your kitchen knives, whether Western or Japanese, an impeccable finish.
Green face, fine grain #3000: this high-grain surface can serve two purposes. Firstly, it can be used as a stepping stone in the sharpening of an exceptional blade, whose hardness is high, and whose steel is capable of holding a good edge over time (we're thinking of carbon blades, for example). Once this phase is complete, you can move on to the other side of the stone to finish the edge. This is the first step to top-notch maintenance!
Secondly, it can be used as a finishing face for less hard blades (with an HRC of around 60), to give them a razor-sharp edge.
It is therefore extremely useful, as it can be used on a wide variety of knives, either to prepare them for further sharpening, or to give them an impeccable finish!
White face, very fine grit #8000: widely recommended for edge finishing. The extreme fineness of the grit reveals the true cutting capacity of your kitchen knives, as it refines the edge (the outermost part of the cutting edge) and marks it so that your blade glides through the food. It provides precision sharpening, and we recommend it for hard blades (over 60 HRC).
A question that often comes up is "how often should I use my whetstone? There's no right or wrong answer, as it all depends on how you use your knives. As soon as you start to feel a loss of edge, don't hesitate to use the stone to maintain a median level of wear.
The silicone base is non-slip for controlled, safe use. It is easy to remove as it is completely flexible (if you prefer to use the stone bare, for example, or when you want to soak the stone).
How to use the stone :
- wet the stone about 15 minutes before use
- place the top half of the blade at a 45° angle to the stone
- apply slight pressure with your index and middle fingers on the end of the blade and raise it 10 to 15° (to help you, there should be about the equivalent of a coin between the back of the blade and the stone).
- During the operation, a black filing will appear: this is what sharpens knives. Once the filings have solidified, add more water and sharpen the rest of your knife (which you can wipe with a soft cloth in the meantime). To find out how sharp your knife is, we recommend the paper test: quick and unambiguous!
In general, it's advisable to have just one person sharpen the knives, as this person will easily be able to take bearings and set the same angle every time. If the angle is maintained over time, the knife will be sharper in the long term! Make sure you use the entire surface of the stone when sharpening, so as not to dig into it unevenly, and regularly moisten the stone during use with a pouring bottle.
