Japanese expertise for this Japanese damascus knife
The 16cm Takeshi Saji VG10 Rainbow Nashiji nakiri knife is a true concentrate of creativity and tradition. Made in Japan, it is hand-forged by master knifemaker Takeshi Saji at the famous Takefu Knife Village. This craftsmen's cooperative is located in Fukui prefecture and groups together several passionate blacksmiths who perpetuate the ancient techniques of Japanese forging, handed down from generation to generation.
It is here that Takeshi Saki designs his knives, which are recognized the world over for their originality and precision of cut. Since the 1990s, he has been certified Master Traditional Craftsman by the Japanese Ministry of Economy, and embodies the excellence of Japanese cutlery.
A Japanese nakiri knife for cutting vegetables
This Japanese nakiri knife is specially designed for cutting even the firmest (but not the hardest!) vegetables. It features a 16cm rectangular blade, forged around a core of VG10 steel, a stainless alloy enriched with around 1% carbon. This high carbon content gives the blade a hardness of 60 HRC, an excellent compromise between strength and edge retention. The latter remains effective for a long time, allowing you to space out sharpening sessions without losing efficiency.
The blade's " flat grind" ensures an optimum cutting angle for effortless slicing, while maintaining good stability. The clean structure of a Japanese knife is ideal for precise vertical cuts, without tearing food fibers.
The VG10 steel core is then coated with numerous layers of softer stainless steel, using the traditional Japanese damascus technique. This technique gives the blade its flexibility, while preserving the strength of its core.
Next, the blade is treated to an original Rainbow finish, with copper highlights that can vary slightly from knife to knife. This bold visual touch makes each knife unique. On the blade surface, the deliberately rough nashiji finish evokes the texture of a nashi pear. It reduces the adherence of food to the blade while accentuating the artisanal character of the whole.
A comfortable octagonal handle made to last
This Japanese Damascus knife features an elegant rosewood handle. This hardwood is renowned for its natural resistance to humidity and its pleasant feel. Its red and brown nuances add warmth and balance to the knife's aesthetics.
The bolster, designed in red pakkawood, provides a robust and elegant link between blade and handle. This composite material, formed by compressing wood and resin, is hygienic, durable and resistant to intensive use.
The octagonal shape of the handle guarantees a firm, ambidextrous grip, ideal for long cutting sessions. The balance between blade and handle offers real comfort in the hand, while allowing precise control of every movement.
Finally, to ensure optimum, long-lasting hygiene, wood paste is applied to the junction point between blade and handle, to fill the gaps. This prevents the infiltration of moisture or food residues, and prolongs the knife's life.
This Japanese nakiri knife is a handcrafted piece that deserves special attention. To clean it, prefer hand-washing with a soft sponge and non-aggressive soap. Dishwashing is forbidden, as is soaking in the sink. After each use, carefully dry the blade and handle, then store it in a dry place, on a magnetic bar or in its case.
