VG10 Rainbow Japanese knives by Takeshi Saji: when tradition meets elegance
VG10 Rainbow Japanese kitchen knives are hand-forged by master craftsman Takeshi Saji, a leading figure in Japanese cutlery. Using forging techniques inherited from centuries-old traditions, he crafts knives that are both high-performance and distinctive in style. Each of his creations combines functionality and aesthetics, and is aimed at both demanding chefs and lovers of fine blades. This exceptional know-how earned him the honorary title of Master Traditional Craftsman, awarded in the 90s by the Japanese Ministry of the Economy.
His workshop is located in the famous Takefu Knife Village, a historic site where numerous craftsmen rub shoulders. A veritable cradle of Japanese cutlery, this place encourages exchanges between blacksmiths and contributes to the transmission of knowledge, between respect for tradition and a spirit of innovation.
A damask knife with a refined design
This paring knife, ideal for precise cutting of small pieces of meat, fruit and vegetables, features a damascus steel blade. This manufacturing technique consists of superimposing several layers of steel around a harder central core. It gives the blade strength, suppleness and balance in the hand, while ensuring good resistance to wear.
The core of the blade is made ofVG10 steel, a high-end alloy developed by Takefu Special Steel. Its carbon content is around 1%, giving it a hardness of around 60HRC on the Rockwell scale. This level of hardness ensures excellent edge retention, so you don't have to sharpen your blade too often. Cuts remain clean, regular and effortless!
The softer layers of stainless steel enveloping the core form a damask pattern unique to each Takeshi Saji knife. The result is naturally elegant, and this model stands out with a slightly coppery hue that gives it character. The blade is also polished to a mirror-like finish, for a result that is as brilliant as it is sophisticated.
A top-of-the-range handle for comfort
The handle of your Japanese kitchen knife is made of rosewood, a dense, naturally moisture-resistant wood. Its deep brown tones bring warmth and elegance to the whole.
A bolster in red pakka wood completes the design: this composite material, made from wood and resin, combines sturdiness and aesthetic appeal, with beautiful visible veins that reinforce the handcrafted style of your knife.
The octagonal shape of the handle offers excellent ergonomics. It ensures a stable, pleasant grip, whether you're right- or left-handed! Even after prolonged use, comfort remains a real asset in the kitchen.
To ensure a hygienic, long-lasting finish, wood paste is applied to the junction between blade and handle. This prevents water or food residues from seeping in, and improves the knife's durability over time.
This damascus knife requires careful maintenance. Avoid putting it in the dishwasher, and never leave it to soak. Hand-cleaning with a soft sponge and non-aggressive soap is recommended. Take care not to get the wooden handle too wet. Once washed, wipe immediately with a clean, dry cloth, then store in a dry place.
Your handcrafted Japanese knife comes in an elegant wooden box, perfect for storage, transport or as a welcome gift!
