The kitchen knife for precise gestures
Zwilling's Gourmet bird's beak knife is indispensable for the most delicate peeling and turning tasks. Designed in the workshops of Solingen, Germany, it benefits from the brand's historic expertise, recognized worldwide for the quality and durability of its blades. Thanks to its small, curved blade, this knife moulds perfectly to the shape of fruit and vegetables, guaranteeing fast, precise movements, even on the most fragile foods such as mushrooms.
A short, curved blade for optimum control
This Zwilling bird's beak knife features a 6cm blade made from Zwilling's special formula stainless steel, a unique alloy offering optimum resistance to corrosion and wear. It benefits from a FRIODUR® heat treatment, carried out by cryogenic quenching, which increases the blade's hardness to around 57 HRC. This ensures that the blade retains its cutting performance over time, while remaining flexible enough for meticulous work.
Its V-edge cutting edge refines the cutting angle to deliver a sharp, even edge. The result is a clean, effortless cut, whether you're peeling tomatoes, turning carrots or preparing decorative garnishes.
A sturdy, ergonomic riveted handle
The knife has a 10cm handle made from black high-density polymer, a robust and easy-to-maintain material that is resistant to humidity and temperature variations. The three stainless-steel rivets securely attach the inserts to the tang of the blade, guaranteeing a reliable, long-lasting knife for all your fine cuts.
Its Western shape with curved heel provides a natural, secure grip, reducing fatigue during prolonged preparation.

Using and maintaining my Zwilling bird's beak knife
