The Fischer Sandvik knife collection is a range of knives highly recommended for and by butchery professionals. They have been designed to be ergonomic and long-lasting.
This case comes with 4 butcher knives:
- 1 boning knife, 11cm blade: the blade fits easily into the tightest spaces to remove as much meat as possible from the bone.
- 1 boning knife with rigid reverse blade 13cm: the butcher's essential boner! With its special shape, the blade leaves no meat on the bone.
- 1 17cm bleeding knife: pointed shape for pricking game or poultry.
- 1 20cm skinning knife: its fine blade is ideal for removing the nerve cells from raw meat. Can also be used for fish fillets
Blades are made of Sandvik 12C27 stainless steel, a Swedish steel (SWE-STEEL) renowned for its sharpness and ease of sharpening. This steel achieves a hardness of 56 to 57 HRC on the Rockwell scale. Its edge retention is superior to that of standard steels. As a result, the frequency of sharpening will be divided by 2, which is not insignificant in professional butchery! The first sharpening operation was carried out by an ultra-precise robot to ensure a perfect cutting edge.
The handles are made of blue polypropylene, over 80% of which is covered by a highly flexible elastomer. This combination ensures perfect watertightness, impeccable hygiene and optimal comfort. They also feature anti-slip ridges and a shape that is highly effective against RSI (musculoskeletal disorders). And they're dishwasher-safe for easy washing.
The case supplied with the knives contains 6 slots for knives or accessories. It measures 43cm by 23cm and can accommodate knives up to 23cm in blade length, as well as a 25cm Sharpening steel.
This case contains the knives most frequently used by butchers, so it would be a shame to go without!
