This Japanese chef knife is handcrafted in Japan by Tsunehisa Cutlery. This small team of experts produces many high-quality Japanese knives!
The chef's knife is also called a gyuto knife in Japanese. It's a versatile model that lets you make a wide range of cuts! You can chop your meat, slice your vegetables or chop your herbs with ease. Just be careful not to use it on hard foods such as squash or bones.
An elegant blade for this Yuzo Japanese knife
This handcrafted Japanese knife features a damascened blade, a technique that consists of forging a rigid steel core and wrapping it in several layers of softer steel. This process gives your blade an ideal balance, with a core that's optimally protected!
440C steel is used for the heart of this blade. This is a robust alloy containing around 1% carbon: the main element that increases a steel's hardness. On the Rockwell scale, the hardness of this alloy is 59HRC, ensuring excellent edge retention and cutting performance.
Alloy 440C also contains around 17% chromium, making it resistant to corrosion! However, this blade still contains a high proportion of carbon, and therefore requires careful maintenance to avoid any risk of oxidation.
To finish the damascus, several layers of softer steel envelop the core. They add suppleness to your knife (without making it flexible), making it less brittle in use. Damascus not only adds flexibility to the blade, it also protects the core!
Damascus is also a real visual advantage! You can observe the superimposition of different layers of steel all along the blade. They form random patterns that are unique on every Yuzo Hamono knife!
The surface of your blade has also been finely hammered to add a touch of refinement to your blade. These patterns are piquetés, as if drops of water had splashed onto the cutting surface.
A handcrafted Japanese knife with a sturdy handle
The handle of your handcrafted Japanese knife is made of smoked oak, a strong, durable wood. It has a high density and is therefore resistant to shock, vibration and humidity to prevent warping. This baikoku oak has benefited from a smoking process to give it a darker hue, while highlighting its natural grain. Your Japanese knife has character and retains its authentic look!
This handle is octagonal in shape to suit the hands of all cooks, whether left- or right-handed! It offers you an ergonomic grip and perfectly controlled handling, particularly during long use.
Wood pulp has been added where the blade joins the handle to fill any small gaps. This ensures a watertight seal and prevents water or small food items from seeping inside.
To care for your damask knife, wash it only by hand with a soft sponge, avoiding getting the handle wet. Once cleaned, dry immediately to remove all traces of moisture and store in a dry place. Do not put in the dishwasher or leave to soak in the sink.
