This 18cm bleeding knife is designed by Giesser in Winnenden, Germany. These knives are specially designed for professional butchers.
This knifehas a sturdy blade for "pricking" meat and bleeding it without damaging it. It's a knife for precision cuts. Its stainless steel blade is perfectly smooth thanks to mirror polishing. This technique prevents rust from becoming embedded, and makes cleaning much easier. The steel is enriched with chromium and molybdenum, an advantage in the fight against corrosion. To improve cutting performance, the blade is vacuum-hardened using an ultra-modern process.
The blade achieves a hardness of 56 HRC, making it shock-resistant and easy to sharpen on a daily basis with a sharpening steel.
At the end of the manufacturing process, each blade is grinded, then a master sharpener finishes the knife by hand, for an exceptional cutting edge.
