They feature two different grit surfaces:
-Blue face #1000: this grit is considered medium, and is therefore recommended for regular maintenance of the cutting edge, to prevent it from becoming too dull.
-White face #6000: this grit is considered very fine, and is therefore recommended for polishing the edge of your blades to reveal their full potential.
How to use the stone :
This stone works with water, so you need to immerse it for 5 minutes before you can use it on your knives. You can re-apply water during sharpening, when you feel it's necessary. You can do this directly by hand, or with a pipette, which is even more precise!
After a few moments' use, you'll notice a small colored sludge forming on the surface of the stone, and this is perfectly normal. This "sludge" is even essential, as it helps to sharpen the knife, so don't clean it during the process.
When you've finished, you can rinse the surface and clean it with a small, soft brush. Wipe it with a dry cloth, then leave it to dry in a room at room temperature (keep it out of the sun so that it dries faster).
Additional accessories :
A small white Nagura stone is supplied with the main stone. It is used to create the famous slurry that facilitates the stone's abrasive action.
Note that the two faces of the stones are glued together by a black base, making them easy to handle.
A transparent box allows you to store it, but it can also be used as a sharpening stand when in use, or as a small basin for soaking the face you want. The box also has a space for the Nagura stone. Its black feet are removable.
Additional information: the dimensions of the stone may vary by a few millimetres, and its weight by a few grams, but this is perfectly normal.

- Press each stone into a rectangular shape
- Allow shaped stones to dry for a short time
- Bake to set
- Carry out the final moulding by hand (a craftsman passes the stone over a grinding wheel to ensure a clean finish)
