A rough forged blade for this handmade Japanese knife
The 13.5 cm blade of this Japanese utility knife is crafted using the San Maï technique: two superimposed layers of steel around a rigid steel core.
The blade's core is made of Aogami#2 steel (also known as Blue Paper Steel 2), enriched with 1.2% carbon. This high-end steel core offers a hardness of 62 HRC on the Rockwell scale, ensuring outstanding edge retention and longer-lasting sharpness.
The rough-forged finish has a raw, authentic aesthetic, and the hand-engraved kanji add a unique artisanal touch to your Japanese kitchen knife.
A Japanese utility knife with an ergonomic handle
The handle of your handcrafted Japanese knife is made from cherry wood, a natural species appreciated for its light, warm hue. It is complemented by a bolster in white pakkawood, a durable and stable composite of resin and laminated wood.
Its oval shape has been designed for a balanced, comfortable grip, suitable for both right- and left-handed users! Each element has been hand-assembled by Kouki Hashimoto in Japan, guaranteeing a meticulous finish and optimum balance.

Caring for a Japanese carbon knife
This carbon steel knife requires careful care: wash only by hand with a sponge and mild detergent. Once cleaned, dry carefully and store in a dry place. Never put in the dishwasher or leave to soak in the sink.
Over time, your blade may change color slightly, which is normal. This is a natural carbon reaction caused by ambient humidity and the acidity of food. This in no way affects the use of your Japanese kitchen knife.
Portrait of Japanese blacksmith Kouki Hashimoto
Originally from Japan, Kouki Hashimoto is a passionate practitioner of the Japanese knife craft. Trained in traditional techniques at the Tosa school, he forges each blade in his workshop using ancestral methods, which he now passes on to his apprentices. His approach combines cutting performance and refined aesthetics. Each piece is unique, reflecting his expertise and exacting standards. When you choose this knife, you are investing in an object fashioned by a young craftsman in his own workshop.
