A Japanese kitchen knife forged to last
This deba knife features a 15 cm blade carefully designed according to the San Maï structure to offer a perfect balance between flexibility and strength. This technique consists of forging a core of rigid steel, which is then covered with two layers of softer steel.
The core is made of Japanese Aogami#2 steel (also known as Blue Steel Paper 2) enriched with 1.2% carbon to ensure very high cutting density. With a hardness of 62HRC on the Rockwell scale, this handcrafted Japanese knife guarantees outstanding edge retention over time.
The rough forged finish lends an authentic artisanal aesthetic to your Japanese kitchen knife. Thesymmetrical grinding of the cutting edge optimizes cutting precision and enables it to be used by all cooks: left- or right-handed.
A handle designed for control and comfort
The handle is made of smoked oak wood, selected for its strength and visual nobility: it contrasts elegantly with the raw blade and stands up to use.
Its ambidextrous octagonal shape ensures a natural grip, whether you're right- or left-handed, and guarantees excellent stability during the most technical gestures.

Care instructions for this carbon knife
Clean this carbon steel knife by hand only, using a soft sponge and a non-abrasive cleanser. Wipe dry immediately after washing, then store in a dry place. Avoid dishwashing or prolonged soaking.
Over time, a patina may form on the blade: this is a sign of regular use and does not affect its performance. To maintain optimum sharpness, sharpen regularly with a Japanese stone.
