Description

This damask Tamahaganenakiri knife is part of the Kyoto range. It's ideal for slicing both large and small vegetables! Cauliflower, tomatoes, eggplants, no vegetable will resist this straight, rectangular blade.

The Tamahagane brand is named after the traditional steel used to make Japanese swords. The blade of Tamahagane knives is as sharp as a Japanese sword!

The excellent cutting quality of this knife is achieved thanks to the3-layer VG5 steel used to make the core of the blade. For connoisseurs, this steel is similar to VG10 steel except that it contains less cobalt. It is, however, more resistant to corrosion. The quality of the cutting edge is comparable to that of VG10, in other words, it's quite excellent! Every cook dreams of making cuts without forcing, and this nakiri won't require the slightest effort to cut your onions or melon, thanks to its extremely hard and solid steel. Tamahagane is the only Japanese cutlery manufacturer to use VG5 steel today.

A softer 63-layer SUS410 steel covers the heart of the blade. These outer layers form the damascus pattern typical of Japanese knives. This damascus gives the knives their incomparable beauty.

Together, these properties give the blade an HRC hardness of 59 on the Rockwell scale, an extreme hardness that's a guarantee of quality! Unlike conventional knives, you won't need to sharpen your Tamahagane Kyoto blades every day, and their durability is increased tenfold.

The handle is made of micarta, a composite material combining paper and resin. Micarta is highly resistant to humidity and temperature variations. It is also highly hygienic, a considerable asset in the food industry. Its dark color adds a touch of originality in perfect contrast with the blade, for a resolutely Japanese final look.

This knife has been designed for chefs and hobbyists looking for exceptional cutting quality, with a fine, clean edge that won't damage food. Its powerful blade makes it much less tiring to use over time. Fans of Japanese knives will also be seduced by the beauty of damascus.

Last but not least, this knife comes in an attractive black presentation box, ideal as a gift!
