The Tamahagane brand is named after the traditional steel used to make Japanese swords. It's easy to deduce that these knives have a cutting edge worthy of a Samurai sword!
The excellent cutting quality of this knife is achieved by the type of steel used in the composition of the blade. The blade features a 3-layer VG5 steel core. For those in the know, this steel has the same characteristics as VG10, except that it contains slightly less cobalt. VG5 is, however, more resistant to corrosion, a significant plus for any cook. These characteristics enable the blade to achieve an HRC hardness of 59 on the Rockwell scale, a guarantee of quality! This means you'll need to sharpen your knives far less regularly than conventional knives, and their durability is increased tenfold.
The handle is made of micarta, a composite material combining paper and resin. Micarta is extremely robust: it is water-resistant and resistant to temperature variations.
