The Tamahagane Kyoto range offers us this Santoku that will assist you in all your culinary tasks!
For the record, Tamahagane is the name of a traditional steel used in the manufacture of Japanese swords. It's easy to deduce that these knives have a cutting quality similar to that of a Samurai sword!
The excellent cutting edge of this knife is achieved by the type of steel used in the design of the blade. This 17.5cm blade features a 3-layer VG5 steel core. For fans of Japanese knives, this steel has the same characteristics as VG10 steel, but is more resistant to corrosion and contains slightly less cobalt. Cutting quality is identical to that of VG10, i.e. it aims for excellence! Every cook dreams of slicing meat and vegetables without exerting the slightest effort, and this is entirely possible with this type of extremely hard, robust steel.
The blade of this knife has an HRC hardness of 59 on the Rockwell scale, an extreme hardness that's quite rare in the cutlery world! This will enable you to sharpen your knives less evenly than knives with low HRC hardness.
This core is coated with63-layer SUS410 steel , which is softer and more resistant to corrosion. These outer layers create the damascus pattern typical of Japanese knives. These damask patterns make these knives true masterpieces.
The handle of this knife is made of micarta, a mixture of paper and resin. This material was chosen for its strength and antibacterial properties: it is water-resistant, resistant to temperature variations, and highly hygienic. Its dark color and light veining add a pleasant touch of originality.
This knife has been designed for professionals and Japanese knife enthusiasts looking for exceptional cutting quality. Its powerful cutting edge makes it much less tiring to use.
Finally, this knife comes in an attractive black presentation box, ideal as a gift for a loved one (or for yourself)!
