Description

This Makoto Kurosaki 15 cm utility knife is a perfect illustration of the Japanese cutlery tradition, combining high-grade steel with craftsmanship focused on sharpness. Handcrafted by Makoto Kurosaki in the famous Takefu Knife Village, it embodies precision and finesse: a Japanese kitchen knife designed to last and to sublimate everyday cutting!

A Japanese knife with a high-performance, long-lasting blade

This 15cm utility knife features a blade forged using the San Maï method: a traditional Japanese technique consisting of forging a hard core between two layers of softer steel, in this case stainless steel. This balances hardness while protecting the core of your blade.

The central core is made of Japanese VG7 steel, a stainless alloy enriched with approximately 1% carbon, as well as vanadium and tungsten. These elements improve wear resistance and ensure grain fineness, enabling the blade to be sharpened to a razor-sharp edge.

VG7 is a Japanese steel developed by Takefu Special Steel to offer an alternative to VG10, while retaining good edge stability and greater ease of sharpening. With a hardness of around 61HRC on the Rockwell scale, this blade offers excellent resistance while retaining an effective edge for longer.

Finally, your Japanese kitchen knife features a polished finish that enhances the aesthetic appeal, adding a touch of elegance to the overall look!

A noble handle, combining aesthetics and ergonomics

The handle of this handcrafted Japanese knife has been designed to offer balance, durability and pleasure in the hand. It is carved from cherry wood, a traditional Japanese material with a seductive feel, lightness and natural resistance to humidity. Its discreet veining and slightly pinkish hue give the knife an understated elegance.

The wood is complemented by a bolster made of red pakkawood, a composite wood obtained by high-pressure resination. This bolster serves as a solid junction between the blade and the handle, while adding a distinctive visual touch and protecting the handle from impact and moisture.

The octagonal shape ensures a comfortable grip for both right- and left-handed users. In the hand, your Japanese utility knife offers pleasant balance, making it easy to cut with precision or with repetitive gestures, especially during long kitchen sessions!

Why does this Japanese kitchen knife stand out from the crowd?

  • San Maï structure with VG7 core: optimum fusion of durability and cutting performance.

  • 61HRC Rockwell: good compromise between hardness and impact resistance.

  • Polished finish: refined aesthetics.

  • Cherry and pakkawood handles: combination of noble, durable materials.

  • Octagonal shape: ambidextrous ergonomics.

  • Handcrafted by Makoto Kurosaki: signature of masterful workmanship.

To care for your Japanese knife, wash only by hand with a sponge and mild detergent. Once cleaned, you should dry it immediately and store it in a dry place. Do not use the dishwasher or leave it to soak in the sink.

Focus on Japanese blacksmith Makoto Kurosaki

Makoto Kurosaki is well known in Takefu Knife Village (Fukui province, Japan), a historic center of artisan cutlery.

Unlike his brother Yu Kurosaki, Makoto has chosen to specialize as a sharpener: he works in collaboration with village blacksmiths, selecting the steel and then sharpening the edge. His expertise enables him to give the blades remarkable cutting finesse while maintaining lasting strength. This artisanal approach is reflected in the knife's balance, lightness and efficiency: a balance between the art of the gesture and technical rigor.

In short, this Makoto Kurosaki VG7 15 cm Japanese utility knife is an exceptional piece to give as a gift or for yourself!
