In the Saurat valley , at the foot of the Ariege Pyrenees, lies France's last remaining whetstone manufacturer. In fact, Ella has been awarded the Entreprise du Patrimoine Vivant (Living Heritage Company) label!
These stones are extracted from the mountains over a period of 2 to 3 months every year, and are then shaped entirely by hand.
They are first cut to the desired size, then washed several times under a powerful jet of water to remove as much stone residue as possible.
They are then placed for 1 hour in a tool called the "berçeuse", which performs a continuous left-to-right movement thanks to an electric mechanism. The cradle will also be filled with pebbles, sand and water, which will have an abrasive action on the stones, giving them an optimal grain.
This stone has therefore been 100% handcrafted from A to Z, and will offer you ideal quality of use, and gentle, precise sharpening of your knives. It also ensures long-lasting sharpness. What's more, its 2 different grits will enable you to sharpen all your knives.
The 1000 grit will sharpen your blades to perfection, removing all the micro-waste accumulated through use. Then, the polished grit will enable you to achieve optimum finishes, for a smooth, perfectly sharp blade.
To use it, you'll need to wet it to obtain a finer sharpness and avoid clogging.
It requires no special maintenance. If necessary, after a certain period of use, you can clean the stone with a washing-up liquid, brushing it under hot water.
