Opinel'sLes Forgés 1890 series offers this beautiful variation on Japanese shapes in the form of this with granton edge santoku knife. As a reminder, the Santoku is very much like a chef's knife, in that it can perform similar tasks: chopping, slicing and mincing all kinds of food.
These Opinel knives are 100% forged, which means they have been fashioned from a single piece of steel. The 3 parts of the knife are shaped simultaneously (handle, bolster, blade) at a temperature of 1200°C. Heavier than an ordinary knife assembled by welding, the fully forged knife is much stronger and more balanced in the hand, since the steel is evenly distributed, so its fiberization is optimal.
The steel alloy used to design the blade is X50CrMoV15, renowned for its excellent anti-corrosion properties, ease of sharpening and good cutting performance. What's more, its impact resistance, measured by the Rockwell test, reaches 56/57 HRC, a hardness associated with Western professional knives.
The stabilized beechwood handle exudes elegance, thanks in particular to the unique veins visible on the grip surface, which contrast with the minimalist appearance of the steel blade. In addition, the V-grip and ergo-profile features provide ideal ergonomics. The V-grip provides a natural grip, while the ergo-profile's curved shape reduces twitching during prolonged use.
To maintain this kitchen knife, remember to clean it thoroughly by hand after each use. Wipe the blade with a soft cloth, without using aggressive detergents. Finally, make sure that water does not penetrate the slot in the wooden handle, as this may cause deformation.
