The chef knife is an essential for all cooks. This 17cm Opinel Les Forgés 1890 chef's knife is no exception: it's a versatile, medium-sized tool that's easy to handle in any hand size. It's just as useful for chopping food as it is for slicing vegetables (onions, carrots, garlic, peppers...) or chopping herbs.
This collection features knives entirely forged from round bars of X50CrMoV15 stainless steel. In this way, the 3 monobloc zones are forged simultaneously: blade, bolster and tang. This manufacturing process combines strength, balance and quality fiberization.
The strength achieved is 56/57 HRC on the Rockwell scale, giving the blade good resistance to wear over time. In addition, the alloyed steel ensures a high-performance cutting edge, yet is easy to sharpen if necessary. What's more, the 30° cumulative sharpening angle is the result of a manual operation subject to strict control tests, helping to ensure optimum cutting power.
The handle, made of stabilized beech wood, is highly refined and authentic. In fact, the appearance of wood can vary significantly from one tree to another for the same species. So each handle is unique in its shade, grain and knots. The V-grip system facilitates gripping, while the curved Ergo-profile is specially designed to reduce muscle fatigue.
To clean wooden handles, we strongly recommend using a clean cloth dampened with lukewarm water (20°C), then wiping immediately with a dry cloth. Absolutely avoid running the handle under water or allowing water to penetrate the slot, as this will deform the handle.
