The Ideal Forgé salmon knife from Sabatier Éléphant cuts your fish into fine slices!
Sabatier Éléphant is a brand belonging to Thiers Issard, a French cutlery manufacturer established in Thiers since 1884. The company handcrafts high-quality kitchen knives.
This salmon knife features a 30cm with granton edgeblade. The cells are hollowed out by grinding to a height of 1cm. They form an air cushion in the grooves of the blade and prevent food from sticking, while producing extremely thin slices. This practical salmon knife is ideal for slicing all types of raw fish.
The knife blade is made of 4116 stainless steel. Thanks to the chromium, vanadium and molybdenum contained in the steel, the blade is highly resistant to corrosion, deformation and wear. With a hardness of 55HRC on the Rockwell scale, the blade is easy to maintain.
This blade is called full tang because it runs the full length of the knife handle. Handcrafted, it is hot-forged, then immersed in 2 oil baths (quenching and tempering) that allow the steel molecules to bond together. The result is a blade of excellent strength. The blade then passes over a grinding wheel equipped with leather rollers, which sharpen it and give it its cutting edge.
The salmon knife has a 12cm handle made of olive wood. This wood is not only robust, but also very elegant. It's easily recognized by its golden hue and singular grain, making each knife unique. To increase its robustness, the handle is pressed against the knife blade with 3 brass rivets.
A round aluminum bolster balances the knife and ensures its light weight. The handle is ergonomically shaped for comfortable use, and its thin guard also guarantees safe use as it prevents your fingers from slipping on the blade.
We recommend washing your knife by hand, taking care not to run the handle under water. This could damage your knife, which is not dishwasher-safe.
