Here are the contents of the set:
- 1 18cm santoku knife: its shape is of Japanese origin. It's a versatile knife that works like a chef's knife. Its blade is slightly more curved than that of a chef's knife, making it ideal for chopping herbs.
- 1 9cm paring knife: this small knife is very practical for everyday use. It enables you to cut small fruits and vegetables with precision, for example!
Care instructions: wash by hand, then dry immediately and store in a dry place. The dishwasher should not be used, and soaking them in the sink is also strongly discouraged.
The San Maï structure means "3 layers" in Japanese. As a result, we find a core composed of a certain steel, then surrounded by a layer of softer steel.
At the heart of San Maï is the 10Cr15CoMoV alloy, whose carbon and chromium levels ensure corrosion resistance and long-lasting sharpness. A softer (i.e. less rigid) alloy is placed around it, to balance and protect it. The superposition of steels can be seen on the bottom of each blade: a thin, lighter line marks the demarcation between the steels.
Finally, the knives feature a rough forged finish: the blade is not polished, so it remains dark. This adds a great deal of character to knives when combined with hammering.
The bolster, which links the blade to the handle, is made from black buffalo horn. As horn is a living material, its nuances can vary from one model to another (some may have small white streaks). For the handle, we use Sequoia, a durable wood whose resistance to humidity and bacteria is appreciated. Its structural strength is also a plus, as it doesn't warp easily. This wood also features attractive shades of brown, red and orange.
The handles of the knives in the set are octagonal. This makes them ideal for ambidextrous use.
The knives are supplied in a magnetic box, making them easy to give as a gift, or simply to treat yourself!
