The Sayuto Sequoia San Mai 13,5cm Universal knife lets you make a wide variety of cuts. Its medium size makes it a pleasure to handle, whether you're an experienced cook or a passionate amateur. It's ideal for slicing fruit and vegetables, mincing boneless meat... It's bound to find a place in your kitchen.
The Sayuto Sequoia San Mai range allows you to equip yourself at a smart price without compromising on material quality. Each knife is made in Guangdong province, known for decades as the cutlery production zone of Western China.
The San Maï structure, which means "3 layers", is found at the base of the blade. As the name implies, the core of the blade is made of a certain alloy, and is then surrounded by a layer of softer steel that sandwiches it, like a simplified damascus.
For this range, the blade core is made of 10Cr15CoMoV, an alloy with a good carbon and chromium content, making it both corrosion-resistant and rigid enough to hold its cutting edge for a long time. The top layer of softer steel not only balances the alloy's capabilities, but also protects the core. The superimposition of steels can be seen on the bottom of the blade: a thin, lighter line marks the demarcation between the steels.
The attractive rough forged finish (unpolished, which is why it's very dark) adds a lot of character to the knife! You can also see the hammering (the little cells). The hammering further defines the knife's visual style.
The bolster, which links the blade to the handle, is made of black buffalo horn. Note that this is a natural material, so its nuances may vary from one model to another (some may have small white streaks).
The effective part of the handle is made from Sequoia, a durable wood that is appreciated for its resistance to moisture and bacteria. Its structural strength is also noteworthy, as it does not warp easily. Last but not least, it features an attractive color in alternating warm tones.
The handle is original in that it is shaped like an octagon. This makes it suitable for both right-handed and left-handed cooks.
Wash the knife by hand, then dry immediately before storing in a dry place. Do not use the dishwasher or soak it in the sink.
