This 9cmparing knife is a kitchen essential. It's easy to handle, thanks to its small size, and very precise. As a result, you can use it to cut small items such as fruit and vegetables. You can also use it to peel them. It's a knife that's at home in any kitchen.
The blade has a San Maï structure, which means "3 layers" in Japanese. This means that the core of the blade is made of a specific alloy and is then surrounded by a layer of softer alloy. It's like a simplified damascus.
For maintenance, wash by hand, then dry immediately before storing in a dry place. The dishwasher should not be used, and soaking it in the sink is also strongly discouraged.
This kitchen knife is made from 10Cr15CoMoV stainless steel, whose carbon and chromium content makes it both corrosion-resistant and rigid enough to hold its cutting edge for a long time. Surrounding this core is a softer steel (i.e. less rigid). The aim: to balance the alloy's capacities, but also to protect the core. The superposition of steels can be seen on the bottom of the blade with the difference in color.
The upper part of the blade retains its rough-forged appearance (which is why it is very dark). Added to this is the elegant hammering, which continues to assert the style of this model.
First, let's talk about the bolster. It forms the link between the blade and the handle, and is made from black buffalo horn. As horn is a living material, its nuances can vary from one model to another (some may have small white streaks).
The effective part of the handle is made of Sequoia, a durable wood that proves resistant to bacteria and humidity. Its structural resistance is also noteworthy: this wood will tend not to warp. Last but not least, it has an attractive shade of brown, red and orange, which contrasts well with the black bolster.
The handle is original in that it has 8 sides, and is therefore octagonal in shape. This makes it suitable for both right-handed and left-handed cooks.
To sum up, sayuto Séquoia San Mai knives have the advantage of being affordable and of providing you with materials with the right capacities. They'll be with you for the long haul, making cutting easier than ever. The knives are made in Western China, in the province most renowned for knife and cutting tool production: Guangdong. Manufacturers in this area have enjoyed a fine reputation in this field for decades.
