Sayuto Sequoia San Mai knives have the advantage of being affordable and of providing you with very interesting materials. They can be used for a wide range of cuts. The knife is made in Western China, in the province most renowned for knife and cutting tool production: Guangdong. Manufacturers in this area have enjoyed a fine reputation in this field for decades.
The kiritsuke 21cm chef's knife is a versatile model that you can adapt to your cuts. For example, you can use it for vegetables, but also for meat (which doesn't contain bones), fresh herbs...It's an ideal knife if you want to start equipping yourself. Its pronounced point gives it plenty of character.
Its blade is built on a San Maï structure, which means "3 layers". As the name implies, the core of the blade is made of one steel and is then surrounded by a layer of softer steel sandwiching it. It's like a simplified damascus.
Here, the knife's core is made of 10Cr15CoMoV stainless steel, whose carbon and chromium content make it both corrosion-resistant and rigid enough to hold its edge over a wide range of cuts. A softer (and therefore less rigid) steel surrounds this core, the aim being to balance the alloy's capacities but also to protect the core. The superimposition of steels can be seen on the bottom of the blade: a thin, lighter line marks the demarcation between the steels.
The upper part of the blade has not been polished, so it is forged (which is why it is very dark). This adds a lot of character to the knife! You can also see the fine hammering (the little dimples). The hammering further defines the knife's visual style.
The handle is made from 2 materials. The bolster, which links the blade to the handle, is made from black buffalo horn. As horn is a living material, its nuances may vary from one model to another (some may have small white streaks).
The effective part of the handle, meanwhile, is made from Sequoia, a durable wood whose resistance to moisture and bacteria is appreciated. Its structural strength is also noteworthy, as it does not warp easily. Last but not least, it has an attractive shade of brown, red and orange, which contrasts well with the black bolster.
The handle is original in that it has 8 sides, so it's shaped like an octagon. This makes it suitable for both right-handed and left-handed cooks.
How do I care for my knife? Wash by hand, then dry immediately and store in a dry place. The dishwasher should not be used, and soaking it in the sink is also strongly discouraged.
