Sayuto Sequoia San Mai knives are produced in Western China, in the province most renowned for knife and cutting tool production: Guangdong. Manufacturers in this area have enjoyed a fine reputation in this field for decades. So you can enjoy efficient knives, made from quality materials, at reasonable prices.
The set contains :
- 1 kiritsuke 21cm chef's knife
- 1 9cm paring knife
It's quite simple: these two knives are among the most widely used in the kitchen. The chef's knife can be used for slicing fruit and vegetables, mincing meat or even chiseling (its shape alone makes it a little different from a standard chef's knife, giving it greater originality). As for the Office, it enables precision work on small fruits and vegetables. They'll quickly find their place in any kitchen!
The blades of the knives in this set have a San Maï structure, which means "3 layers" in Japanese. As the name suggests, the core of the blade is made of steel, and is then surrounded by a layer of softer steel.
At the heart of the San Maï is the 10Cr15CoMoV alloy, whose high carbon and chromium content ensures corrosion resistance and long-lasting sharpness. A softer (and therefore less rigid) steel surrounds this core, to balance and protect it. The superposition of steels can be seen on the bottom of each blade: a thin, lighter line marks the demarcation between the steels.
These knives are rough forged: the blade is not polished, and is therefore dark. This adds a great deal of character to the knives when combined with hammering.
The bolster, which links the blade to the handle, is made from black buffalo horn. As horn is a living material, its nuances can vary from one model to another (some may have small white streaks).
The effective part of the handle is made of Sequoia, a durable wood whose resistance to moisture and bacteria is appreciated. Its structural strength is also a plus, as it does not warp easily. This wood also features attractive shades of brown, red and orange.
The handles are octagonal. This makes them suitable for both right-handed and left-handed cooks.
These knives are supplied in a magnetic box, making them easy to give as a gift, or to treat yourself!
Care instructions: wash by hand, then dry immediately and store in a dry place. The dishwasher should not be used, and soaking them in the sink is also strongly discouraged.
