This 21cm chef knife is perfect for a variety of cuts. It's the most versatile knife in the kitchen! It enables you to chop, mince or chisel your food with precision and efficiency. It's a great choice if you're just starting out in the kitchen, as it will enable you to perform a wide range of actions.
Here's our advice on maintenance: wash by hand, without soaking. After washing, wipe with a soft cloth to remove all traces of moisture. Do not use the dishwasher.
This yoshihiro knife features a damascened blade. The blade core is made of ZA-18 Japanese steel. This stainless steel is produced by Aichi Steel. Its composition is similar to that of VG10, an alloy much appreciated in the kitchen, except that it has a higher carbon content (1.2%). This makes it rigid and long-lasting, with a Rockwell hardness of around 61 HRC.
The blade also has a high chromium content, giving it a stainless look.
Subsequently, this quality core is surrounded by several layers of softer steel that envelop and protect it, while providing the flexibility it needs to avoid brittleness. This is where Damascus comes in! In addition to an interesting structural aspect, this technique adds a lot of character to the knife, and each blade will be unique, with its own patterns.
Oak has been chosen for the handle. This beautiful, warm-toned species is durable (which is why it's often found at the base of furniture). For example, it is resistant to condensation and humidity in general, as well as to shock and vibration. Here, the handle has been burnt at the end. This makes it even more resistant, while giving it an original style. The color gradient gives it a real visual identity.
Its 8 sides make it suitable for both right- and left-handed cooks. Lightweight and easy to handle, it's a pleasure to use, even for long cuts.
Yoshihiro offers high-performance kitchen knives that will last for years. The brand has been established for a hundred years in the Land of the Rising Sun, and the craftsmen who work on these knives are the descendants of highly skilled blacksmiths, who themselves produced the swords of the warriors of the time (the know-how can be traced back to the 14th century). Over the years, the techniques used to create swords have been transferred to the field of cutlery, which is why Japanese knives are so sharp!
Each knife created by the brand is unique: prestige guaranteed! Manufacturer Yoshihiro's motto is: 一期一会. This could be translated as "every moment is a once-in-a-lifetime opportunity".
