This 16cm deba knife is typically Japanese in shape, with a wide blade ideal for chopping fish.
Its blade structure is known as San Mai, meaning that it is formed from 3 layers. It has a simplified damascus pattern, which you can see on the bottom of the blade in the form of a small irregular wave.
The heart of the blade is made of AUS8 Japanese stainless steel, enriched with molybdenum and vanadium, 2 essential elements in an alloy. For example, molybdenum increases the knife's resistance to corrosion, while vanadium increases its resistance to impact.
AUS8 steel also contains 0.8% carbon and 14.5% chromium. The former has an impact on the knife's hardness (which totals 59 HRC), while the latter is essential for the knife's resistance to oxidation. These different elements make for a high-performance, easy-to-maintain alloy.
All this is topped by a layer of SUS1A-1 steel, which increases the knife's resistance to corrosion.
The hammered finish of the blade adds character to the knife. Each cell is unique, for an original look on every knife in the series.
The handle is made of dark laminated wood, with unique veins available on each model. Its oval shape makes it suitable for both right- and left-handed use, and its polished surface is very pleasant in the hand. The knife is lightweight, which is important if you're going to use it over time, as it will tire your wrist less.
The knife comes in a beautiful wooden case, the lid of which has been pyrographed with the brand's logo, for added authenticity. It's an ideal gift, or even a treat for yourself!
Care: wash by hand and dry immediately with a soft cloth. Once washed and properly dried, the knife can be stored in its box, away from moisture.
