Description

Shizu Hamono knives have been made for over 50 years in the town of Seki, Japan. The manufacturer opened its doors in 1959, blending Japanese traditions with new technologies to create its knives. They meet the highest standards, and will accompany you in the kitchen for years to come. Shizu Hamono's specialty is blade polishing, a complex process depending on the alloys used in manufacture.

This expert knifemaker offers you the Shizu Hamono Yuri knife series, a range of high-performance design models at very attractive prices.

This 18cmsantoku knife is a multi-purpose knife, the equivalent of a Western chef's knife. You can use it to chop, chisel or mince your food. It's ideal for fruits and vegetables, fresh herbs and meat (boneless).

The blade has 3 layers, known as the San Mai structure. It's a simplified damascus, which you can notice along the cutting surface, thanks to a small wave towards the cutting edge.

The heart of the blade is made of AUS8 Japanese stainless steel, enriched with molybdenum and vanadium, two essential elements in an alloy. For example, molybdenum enhances the knife's corrosion resistance, while vanadium increases its impact resistance. AUS8 steel also contains 0.8% carbon and 14.5% chromium. The former has an impact on the knife's hardness (which totals 59 HRC), while the latter is essential for the knife's resistance to oxidation. The result is a high-performance, easy-to-maintain alloy. All this is topped by a layer of SUS1A-1 steel, which increases the knife's resistance to corrosion.

The handle is made of laminated wood in light shades, with unique veins on each model. Its oval shape makes it suitable for right- and left-handed use, and its polished surface is very pleasant to grip. The knife remains lightweight, to avoid fatigue during prolonged use.

The knife comes in an elegant, light-colored wooden box. The brand's logo is pyrographed on the inside of the lid, for added authenticity. You can give it as a gift without hesitation, or simply treat yourself!

We recommend hand-cleaning and immediate drying with a soft cloth. Once washed and properly dried, the knife can be stored in its box, away from moisture.

I didn't know this brand, but it's by far the best and superior to other brands like Kai etc...much more expensive, in terms of cutting quality, lightness, handling, the blade is very fine and flexible, very precise, which I discovered in a Korean video on Youtube, but most Japanese and Korean women who make their videos use it in addition to their other knives, but it's these knives that they use most often. This is the only site that offers this brand of knife. I bought all 3 knives in this range.
