Yaxell has been manufacturing knives and cutting Utensils since the 1930s. The company's expertise stems directly from the age-old design of the Japanese katana, blades renowned the world over for their efficiency.
The brand strives to create Japanese kitchen knives in line with the needs of international chefs. These exceptional blades will serve you for years to come, ensuring you enjoy your work every time!
The ZEN series of knives will take your mastery to a whole new level. You'll feel at ease with every cut, and over time.
This large 12cm paring knife is a concentrate of efficiency: its blade features unique technical and visual characteristics that are sure to surprise you!
First and foremost, it has a VG10 steel core, which is a high-quality, high-cost steel.
Its specific composition (1% carbon, 15% chromium, 0.2% vanadium, 1% molybdenum and 1.5% cobalt) makes it stronger than standard blades, and consequently sharper (the wire being finer). It achieves a hardness of 60HRC on the Rockwell scale. This core is surrounded by 36 alternating layers of hard and soft steel (18 layers on each side): this is the damascening process. This goldsmith's technique is used to ensure the blade's perfect blend of strength and suppleness.
Finally, the cutting surface has been hammered on its upper edge, creating an elegant alchemy with the damascened layer. The micro-alveoli created by the hammering will enable you to cut your food more efficiently, as it will stick less to the surface.
The knife's handle adds to its overall harmony. Made from micarta canvas, it is ultra-durable. Quite simply, you'll be able to use it for years without it moving a single millimeter.
Composed of 60% linen and 40% resin, this composite material is extremely durable and resistant to temperature differences. It can withstand heat of up to 150°C! It is also highly resistant to humidity.
Because of this capacity, micarta will not shrink, preventing any gaps from forming between the blade and micarta. What's more, this special material has been approved by the American FDA (Food and Drug Administration) for use in professional kitchens.
Last but not least, the 2 rivets join the parts of the handle, making this knife a truly solid piece of equipment.
To care for it, wash it gently and wipe it dry immediately afterwards to preserve all its splendor. Although the damascening is made of stainless steel, the VG10 core contains a high carbon content, which makes it more susceptible to corrosion. If the blade is not damp, it will retain all its splendor.
The impeccable finish and meticulous styling of this particular knife will make it an almost collector's item in your kitchen equipment. The combination of handle and delicate blade ensures ideal harmony...
