Its small, precise blade cuts cleanly

The paring knife is well known for its ability to make precise cuts in small fruits and vegetables. Its 10cm blade also enables you to peel them easily if necessary.

This ZEN knife has a blade core made of top-grade VG10 steel. This alloy is widely used in cutlery because of its exceptional characteristics.

VG10 is composed of approximately 15% chromium, 1% carbon, 1% molybdenum, 0.2% vanadium and 1.5% cobalt. The carbon contributes to the blade's rigidity, for better wire performance, while the chromium makes it resistant to corrosion.

This alloy also gives the blade a hardness of around 60 HRC, higher than that of standard steels. The blade's cutting edge is highly efficient, durable and easy to sharpen with a stone.

The VG10 core is surrounded by 18 alternating layers of hard and soft steel on each side, for a total of 36 layers: this is damascening. This meticulous technique increases the blade's strength and suppleness tenfold, with a perfect balance between the two. It's a technique that the Japanese have mastered to perfection.

Finally, the blade is hammered all over the top to increase its strength. This also creates an elegant visual effect in harmony with the damascus. The hammering creates micro-cavities that are also useful when cutting. They prevent moist or greasy food from sticking to the blade, cutting it cleanly.

Comfortable micarta handle

The Damascus paring knife has a black canvas micarta handle, a composite of 60% linen and 40% resin that resists the effects of moisture. This prevents the knife from shrinking over the years.

It's also a highly durable material that resists temperature variations, withstanding heat up to +150°C, for example. Micarta does not warp, which prevents the creation of gaps between handle and blade.

Micarta has been approved by the American FDA (a food and pharmaceutical control agency), making it suitable for use in professional kitchens. The handle is completed by two rivets that ensure its excellent hold.

Your knife should be cleaned gently by hand, as it is not dishwasher-safe. Be sure to dry it thoroughly immediately after washing.
