The Zwilling Pro Chinese cleaver is a rather imposing knife model, with a high, square blade. Although its name might suggest otherwise, it is not recommended for cutting meat bones (unlike its Western counterpart, which can tackle small bony parts). In fact, the Chinese cleaver is an asset when it comes to cutting vegetables: it can be used to chop and mince all kinds of vegetables, even larger ones such as cabbage (you can also mince boneless meat).
What's more, cleaver made using German Zwilling technology, so you can count on its reliability!
The blade is made from specially formulated stainless steel, enriched with carbon and chromium. These last two elements have a direct impact on the cleaver's corrosion resistance and strength. Its strength is rated at around 56/58 HRC: not only is the cutting edge high-performance, it is also easy to maintain (when the need arises, you can use a Sharpening steel to restore it to its original cutting capacity).
Its SIGMAFORGE forged blade is highly resistant, as it is formed from a single piece of steel, thus avoiding too many welding points.
FRIODUR quenching is a heat treatment unique to Zwilling, in which the steel is immersed in ice to bring its temperature down as quickly as possible. The aim of this treatment is to further increase the strength and hardness of the steel already enhanced by the alloy. It also perfects the cutting edge, giving it a little extra flexibility when cutting.
The V-Edge profile ("V" shape) is sharpened at 15° on each side of the blade (a total of 30°). The sharp cutting edge rivals that of certain Japanese knives!
The black synthetic handle features 3 rivets that secure the full tang blade inside. Comfort is optimal, guaranteed ambidextrous. This cleaver also features a curved Bolster that links the blade to the handle. Soft and pleasant to the touch, it prevents fingers from slipping on the cutting surface.
The range's final asset is its sleek styling, created by Italian designer Matteo Thun. The unadorned appearance enhances a totally timeless design!
