The Kurosaki Senko Japanese knife has a core of SG2 stainless steel, an expensive "powder" alloy with a Rockwell hardness of 63 HRC. Its rigidity allows you to space out sharpenings, and its cutting edge can be worked razor-sharp. It's a real asset for working efficiently and calmly. A layer of stainless steel is then sandwiched around the blade, creating the so-called "San Maï" structure, a simplified 3-layer damascus. A unique hammering pattern has been created on the upper part of the blade, on both sides. The handle is made of sandalwood, an attractive dark wood that contrasts perfectly with the white pakkawood bolster. The whole is octagonal in shape to suit all cooks, right- or left-handed.
