This 15cm chef's knife enables you to cut, chop or mince your various foods with precision. It's an all-purpose knife, made easy to handle thanks to its reduced size.

The knife is completely forged, which means it's made from a single solid bar of steel. It is then heated and pressed into its final shape. Since it's made from a single piece, it's much stronger, as there are no welds that could weaken it over the long term.

The blade is made of NITRUM®stainless steel, a nitrogen-concentrated alloy for increased blade hardness (a composition specially developed by Arcos). It boasts a hardness of 57 HRC, giving you a durably marked edge for long-lasting performance, while remaining easy to sharpen. It's a great alloy for everyday use.

The knife features a new-generation cutting edge, the fruit of the latest technologies in the sector. Its cutting angle, named Silk Edge®, is a cumulative 24/25°: your cuts are incredibly precise and clean. Your food is sliced effortlessly.

The back of the blade has been softened to adapt the cutting surface to the specific gestures of chefs.

Its bolster also features a new design, allowing the wire to be completely sharpened to guarantee perfect cutting quality.

The handle is made of black POM, a highly resistant synthetic material, particularly in the face of temperature variations and detergents. It is enriched with Bactiproof Silver® treatment, which effectively fights bacteria. 3 stainless steel rivets hold the POM to the full tang blade (which goes to the end of the handle).

Visually, this is a timeless knife that will always find its place in the kitchen, thanks to its dynamic shape and classic colors.

You can wash it by hand, then dry it immediately to avoid prolonged contact with moisture. That way, you'll be able to look after it for years to come.

I'm almost starting to regret buying my Sabatier Nitro plus knives... Which are certainly very good, but for the same cutting edge and much less money, you get these. Well, we'll have to wait and see how the cutting edge holds up over time (HRC 57 for this model, compared with HRC 58 - 60 for the Nitro +). For the moment, this knife remains my favorite. To sum up: good grip, all-round size, very good cutting edge, unbeatable value for money, well done.

Various kitchen cuts. Used at the table to carve roasts and lamb shoulders. Good cutting edge and practical for small roasts because of its medium size. Good handle, comfortable to hold.
