Imagined by a Parisian Michelin-starred restaurateur, the 9.47 knife was invented with the aim of having a table knife that performed as well as a folding knife, but was still easy to use, refined and with a magical, timeless design.
Perceval 9.47 knives are entirely designed and crafted by professionals. Everything is done by hand, from assembly to finishing, in the Perceval workshop based in Thiers.
This knife features an 11cm blade in 14c28N stainless steel. The blade is cryogenically hardened for superior quality. On the Rockwell scale, the blade has a hardness of 59HRC. The alloy makes it strong and corrosion-resistant. What's more, it has excellent edge retention, so you don't have to keep sharpening it. What's more, this blade is polished with emerized buffalo leather for an optimum finish.
The 10.7cm handle is made of matt black polyacetal. This material is resistant to shock, wear and the various acid attacks of food. As for the design, the handle is very chic and can be used for both special occasions and everyday use.
Care instructions:
These knives are not dishwasher-safe. Dishwashing liquids and other detergents can cause chemical reactions, damaging the metal of the blade.
This Perceval table knife should be cleaned with warm soapy water and a sponge. Do not use the scraper to avoid damaging the blade and handle. Once washed, your Perceval knife should be rinsed in lukewarm water and immediately wiped dry to ensure long life.
