Founded in 1971 by engineer Akira Honma, the Japanese Glestain brand was born of a clear desire to use technology and the science of materials to optimize the performance of kitchen knives. From the outset, Honma san has worked closely with chefs and restaurants to perfect its creations thanks to concrete feedback from the field.

High-performance, long-lasting ACUTO440 steel
Glestain K Series knives are made from ACUTO440 stainless steel, an alloy rich in carbon, chromium, molybdenum and vanadium. The carbon increases the alloy's hardness, enabling it to reach around 59 HRC on the Rockwell scale. This level offers an excellent compromise between edge retention and ease of sharpening.
Vanadium reinforces the steel's structure while providing a certain elasticity that improves impact resistance. Molybdenum and chromium reinforce corrosion resistance. The result is a durable, stable steel suitable for intensive use.

Sub Zero hardening and convex cutting edge
To optimize cutting performance, our blades are Sub Zero hardened in seven stages. This technique involves heating the blade to a high temperature and then immediately subjecting it to extreme cooling. This process refines the steel's internal structure, improving its rigidity and stability.
The convex cutting edge facilitates better penetration of food, enabling clean, precise cuts. Honeycombs on the blade reduce the adherence of wet or greasy food, making work smoother and faster.
Ergonomics designed for professionals
The handles are made of black pakkawood, a composite material derived from laminated wood and hot-compressed resin. It combines the aesthetics of wood with the strength of a technical material. Robust and durable, it stands up well to repeated use.
The Western-style handle is suitable for both right- and left-handed users. The full tang blade is secured by three stainless steel rivets and a stainless steel bolster for optimum balance. This design guarantees comfort, precision and long-term reliability.
To preserve your Glestain knife, we recommend washing it exclusively by hand with a soft sponge, then drying it immediately before storage.
