The Yuzo Japanese knife in authentic, elegant style
This Yuzo Hamono Japanese knife features a blade with a damascus structure: a technique involving the creation of a rigid steel core which is then enveloped in multiple layers of softer steel. This process strengthens the core and balances the blade, making it more supple and less likely to break.
Damascus also offers real aesthetic appeal! On the surface of the blade, the different layers of steel overlap to form delicate wavy patterns, creating unique designs on every knife.
Japanese VG10 steel has been selected for the core of this blade. This high-quality alloy is often used in the kitchen. It contains around 1% carbon, an essential element for increasing the blade's hardness. In fact, the hardness of this handcrafted knife reaches 60HRC on the Rockwell scale, which guarantees an efficient, long-lasting cutting edge to reduce the frequency of sharpening.
What's more, VG10 steel contains around 15% chromium, making it more resistant to corrosion. However, it is important to maintain your damascus knife carefully to avoid oxidation.
The VG10 core is then covered with multiple layers of protective steel, reinforcing the blade's strength.
Finally, the blade has been polished to create an attractive contrast with the damascus.
The handle of this kitchen knife is made of olive wood, a species renowned for its strength and longevity. This dense, antibacterial wood resists humidity well and holds its shape in the face of condensation. Olive wood is also admired for its light color and unique veining, creating a natural contrast.
A piece of black horn has been added as a bolster to connect the handle to the blade. This bolster is set with a white micarta ring, adding a touch of finesse to your Yuzo knife. Note that as horn is a natural material, its appearance may vary slightly from one knife to another.
Octagonal in shape to suit all types of cooks, this handle is suitable for both right- and left-handed users. Its ergonomic grip ensures perfect handling, even during prolonged use.
Finally, wood filler has been added to fill the small gaps where the blade attaches to the handle. This ensures a better seal to prevent water infiltration.
A handcrafted nakiri knife
The nakiri knife is a model used in the kitchen for slicing fruit and vegetables. With it, you can slice a wide range of foods and cut them in a variety of ways: diced, in sticks, sliced, etc. Its high-performance blade means you can be fast and efficient!
This range of Japanese knives was manufactured by the Kiryu company, which was founded in 1927. Founded in Japan, it was the first to mass-produce knives in stainless steel, which at the time was a material just imported from Europe. It inherited the know-how of the Japanese blacksmiths of yesteryear, who crafted high-quality knives by hand.
To care for your handcrafted knife, wash it exclusively by hand using a non-abrasive sponge and mild detergent. After washing, dry it immediately to preserve it in a dry, moisture-free environment. We strongly advise against soaking the knife in water, and do not use the dishwasher.
