This Yuzo Hamono Japanese knife features a damascus steel blade, which means that a rigid steel core is surrounded by several layers of softer steel. This technique strengthens the core and balances the blade, making it more flexible and less likely to break.
Damascus also has real aesthetic appeal! The layers of steel overlap on the surface of the blade, forming delicate wavy patterns that create unique designs on every knife.
The core of this blade is made fromJapanese VG10 steel. This high-end alloy is widely used in the kitchen thanks to its excellent properties. With a carbon content of around 1%, it gives the blade great hardness. In fact, this handcrafted knife achieves a hardness of 60 HRC on the Rockwell scale, guaranteeing an efficient, long-lasting edge that reduces the frequency of sharpening required.
VG10 steel also contains 15% chromium, ensuring good resistance to corrosion. However, it is important to maintain your damascus knife with care to avoid the risk of oxidation.
Once the VG10 core has been formed, it is then enveloped in several layers of steel that act as a protective barrier and reinforce its strength.
Finally, the blade has been polished to provide a superb contrast with the damask.
The handle of this Japanese damascus knife is made from olive wood, known for its strength and durability. This dense wood is able to resist humidity and retain its shape despite condensation. What's more, olive wood features a light hue and unique grain on each piece, offering a welcome natural contrast.
A black horn bolster has been added to elegantly link the handle to the blade of your Yuzo knife. This bolster is adorned with a white micarta ring, adding a refined touch. As horn is a natural material, its appearance may vary slightly from one knife to another.
The handle is octagonal in shape to suit all cooks, right- or left-handed. Its ergonomic grip guarantees perfect handling, even during prolonged use.
Finally, wood pulp has been injected to fill the small gaps where the blade fits into the handle. This ensures a better seal to prevent water infiltration.
The Universal knife is used in the kitchen for many small tasks. It's ideal for peeling, chopping and mincing fruits and vegetables, as well as herbs. It is also effective on meat and cheese, as you can cut small cubes with it.
The Kiryu company, founded in 1927, is behind this range of Japanese knives. A pioneer in Japan, it was the first to mass-produce knives in stainless steel, a material freshly imported from Europe at the time. Kiryu has preserved the expertise it inherited from the Japanese blacksmiths of yesteryear: they handcrafted knives to the highest quality.
To keep your handcrafted knife in good condition, it's crucial to wash it only by hand, using a soft sponge and mild soap. Once washed, be sure to dry it immediately to protect it from moisture. Putting the knife in the dishwasher or leaving it to soak in the sink are not recommended.
