Description

A Japanese knife made of quality materials

This Yuzo Hamono bunka knife is a multi-purpose model that lets you make a wide range of cuts! The bunka resembles the kiritsuke, but with a smaller blade for easier handling. With it, you can cut fruit, vegetables, meat and fish with ease. Its pronounced point allows you to work with greater precision.

This range of Japanese knives has been manufactured by Kiryu since 1927. Founded in Japan, it was the first to mass-produce knives in stainless steel, a material just imported from Europe. The company has inherited the skills of the Japanese blacksmiths of yesteryear, who produced high-quality, finely-worked knives by hand.

The blade of this handcrafted knife features a damascened structure: a process that consists of forging a rigid steel core and then covering it with several layers of steel. This technique protects the core and gives the blade balance, making it more supple and therefore less brittle.

Damascus is also a real aesthetic asset! On the cutting surface, you can see the superimposition of the different layers of steel. They form fine, random waves, creating unique patterns on each knife.

The heart of the blade is made ofJapanese VG10 steel, a high-quality alloy frequently used in the kitchen. Its composition contains around 1% carbon, the crucial element that increases a blade's hardness. For this kitchen knife, hardness is 60HRC on the Rockwell scale. Your blade has an efficient, long-lasting cutting edge, so you don't have to keep sharpening it.

Also, the VG10 alloy is composed of 15% chromium, ensuring greater resistance to corrosion. Be careful, however, as this blade has a high carbon content and therefore requires careful maintenance to avoid oxidation.

Next, the VG10 core is surrounded by several layers of steel to protect it and make your blade more resistant.

Finally, the blade of your Japanese knife has been polished to create a beautiful contrast with the damascus.

A durable, sturdy wooden handle

This damascus knife features a handle made from olive wood, a sturdy species renowned for its durability. Antibacterial and dense, this wood resists humidity well, and is difficult to warp with condensation. Olive is also appreciated for its light color and contrasting grain, for an authentic look.

A black horn bolster is added to the handle to link it to the blade. The bolster is set with a white micarta ring to add finesse to your Yuzo knife. Note that horn is a natural material and its appearance may vary slightly from one knife to another.

The handle is octagonal in shape to suit all cooks, right- and left-handed alike! It guarantees an ergonomic grip for perfect handling, especially during prolonged use.

Wood paste has been added to fill the small gaps where the blade meets the handle. This makes it completely watertight and prevents water from seeping inside.

To care for your bunka knife, wash only by hand with a non-abrasive sponge and mild detergent. After washing, dry immediately and store in a dry place, protected from moisture. Do not soak your knife in water, and do not use the dishwasher!
