De Buyer's 16cm FK2 tranchelard knife lets you cut thin slices of salmon or ham with precision!
The blade of the tranchelard knife is supple and flexible, allowing it to penetrate pieces of ham, bacon or salmon without difficulty. With its 16cm with granton edgeblade, you get thin slices that don't stick to the knife, and you can easily work on small pieces of meat like ham or bacon quarters or small salmon fillets. The blade of this slicer is typical of De Buyer's FK2 range: it perfectly combines the finesse of Japanese blades with that of Western chef's knives, and features a unique geometry.
To design the blade of this knife, De Buyer used X50CrMoV15 stainless steel, an alloy known for its resistance to shock and corrosion. It contains 0.5% carbon to solidify the blade, and is enriched with molybdenum and vanadium to increase strength and protect the blade from impact. The blade reaches a hardness of 56 HRC on the Rockwell scale, synonymous with easy daily maintenance with a sharpening gun.
The handle of the tranchelard knife is made of black polymer reinforced with carbon fiber for strength and ergonomic grip. The handle's non-slip texture ensures safe use of your knife. The thick bolster and one-piece tang guarantee a solid, reliable knife for the long term.
Another advantage of this knife is that you can adjust its balance to suit you perfectly. Simply unscrew the end of the handle and add or remove as many washers as required.
