This Due Cigni Hakucho chef knife (also called Gyuto in Japanese) has a 17cm blade.
The blade is made of German X50CrMoVN15 stainless steel, a perfect alloy for everyday use. Its resistance to oxidation makes it a pleasure to use in the kitchen (with normal use and care).
This alloy achieves a Rockwell hardness of 55/57 HRC, to ensure a good cutting edge while remaining easy to sharpen. You can maintain it with a Sharpening steel.
The logo of this series is embossed on the cutting surface, the two Japanese characters translating the word "swan", especially as Hakucho has the same meaning.
The knife's handle is made of olive wood, a noble species with unique veins. Its specific fruity scent gives it an undeniable cachet. The handle is complemented by 3 stainless steel rivets that grip the full tang blade inside.
In terms of design, the knife blends clean lines and warm colors. The result is a blend of Italian craftsmanship and Japanese aesthetics!
Wash by hand, and dry immediately afterwards to avoid prolonged contact with moisture. That way, you'll be able to preserve it over time.
Here are the knife dimensions:
- Handle length: 12.5cm
